Abstract

The aim of this study is to investigate the impact of socioeconomic variables on food consumption patterns and on food and nutrition security in territories of the Consortium for Food Security and Local Development (CONSAD) in Mato Grosso do Sul/Brazil. Specifically, we intend to identify the relationship between socioeconomic circumstances and food consumption behavior; ii) identify the relationship between socioeconomic conditions and food security and nutrition; iii) lifting the relationship between food security and nutrition security; iv) identify the possible effects of nutrition knowledge on the food consumption behavior. To that end, a theoretical model was formulated; the hypotheses were tested using structural equation modeling. The results provide a basis for the lifting of weaknesses, strengths, threats and opportunities of the territory, directing the potentialities and difficulties in establishing public policies to food and nutrition security.
